About This Coffee:

Coming from Guji, Ana Sora is a new connection for Tenfold, and in our exploration of Ethiopian coffees we find it to be of exceptional quality. Lots of bergamot, black tea, and berry forward dark chocolate are met with acidity of subtle presence, but high quality. The texture is rich, but soft, leaving a soft impression each sip. The high elevation and lower temperatures at which it’s been produced contribute to the complexity and overall clarity of the cup profile, as the cherries have more time to develop on the plant. 

This coffee is best when brewed with a filter, and has excellent potential for iced methods as well. It’s soft texture and gentle acidity shine through just about any way you prepare it.

    Ana Sora

    The Ana Sora farms and washing station are owned and operated by producer Israel Degfa, near the village where it gets its name. At some of the highest growing elevation (and lowest temps) in the Guji Region, their coffees have a distinct cup profile, as cherries take longer to mature and thus more time to develop on the plant. In the lot we purchased we taste bergamot, black tea, dark chocolate, berries, balanced acidity, and a soft texture.

    Ana Sora also has the distinction of being a privately owned network of farms & a mill, as opposed to the usual co-op structure found in Ethiopia. This contributes to quality control, and consistency year on year.

    This is Tenfold’s first time buying coffee from Ana Sora, and indeed a newer connection for our importer, Falcon Coffees. We’re beyond excited to roast and serve this coffee, and support the work Israel Degfa is doing with the producers of Ana Sora.
