Cherry is harvested from surrounding smallholder farms and dried naturally over three to five weeks. The process is simple in approach but requires close attention, with regular turning to ensure even drying and stability.
In the cup, it leans bright and energetic. Pomegranate leads, with a sharper citrus line running through it. There’s a lime-like acidity that keeps things tight, and a sparkling quality that carries through the finish.
