About This Coffee:

While the coffees we purchase from Sancoffee feature more in our blends at Tenfold, that is not to discount the nuance of flavor expression present in Campo das Vertentes, and certainly at Fazenda Samambaia. This year we’re lucky to have 3 excellent microlots from the Samambaia farm, all processed in the same way; Aerobic Fermentation in a Pile, dried Naturally

This Yellow Catucaí is full of sweetness, and the distinct grapefruit tones balanced well with soft and rich texture. Espresso is the way, with or without milk. You’ll want to drink this one daily. 

Notes on Process:

Once picked, whole cherries are taken to a drying patio, and piled in layers 30-40cm high for open air fermentation. The thickness of the layers slows down drying due to less sunlight exposure, which in turn increases fermentation activity. After about 48hrs, when the internal temperature of the pile reaches 38ºC, the cherries are spread in thinner layers to quicken drying until the desired moisture level is reached.

Partnership

  • Sancoffee

    Sancoffee is a collective of coffee growers deeply rooted in Campos das Vertentes, in the heart of Minas Gerais state. They believe in empowering farmers, to enable higher quality and consistency of their coffee, and keep their focus on sustainability and fostering lasting relationships with members of the cooperative and beyond.
    Newly christened with a geographical indication in Brazil, Campos das Vertentes (meaning “watershed fields”) is reputed for its abundance of water, fertile soils, and a rich agricultural tradition, specifically with coffee growing. This micro-climate is perfectly suited for growing excellent coffee, and production in the area can be traced as far back as 1860.

    Sancoffee began with Fazenda Samambaia, a farm run since 1993 by Henrique Dias Cambraia. In 2000, Cambraia founded the collective with other producers in Campos das Vertnetes to promote higher quality and emerge as a force in specialty coffee. Since the beginning, Fazenda Samambaia and its partners have led the way with innovative farming and post-harvest practices, and haven’t shied away from experimentation, be it with new varieties, or in processing methods.
    This collective produces some of the best coffees we can find in Brazil, and it’s a privilege to be able to partner with them.

  • Our Relationship

    Our relationship to the people of Sancoffee begins even before Tenfold’s beginnings. Jacob, our founder, maintained a successful long-term partnership with them during his time at Five Senses Coffee in Australia. Naturally, Jacob sought out a continuation of this relationship when building Tenfold.

    We’ve been lucky enough to meet many of the Sancoffee team in person, and can say that without exception, the people behind Sancoffee are wonderful to know. Dedicated to the progression of specialty coffee, sustainable practice in agriculture, and kindness overall. We couldn’t be happier that Sancoffee have been supplying Tenfold with excellent Brazilian coffees, and friendship since our inception.
